Granola Bars - Let's eat 'em up!

Hi everyone! One goal I have for this blog is to share yummy treats that don't have added sugar. I have really struggled with containing my sugar intake (my husband calls me a sugar ant) and I decided about 6 months ago to stop eating treats. If you know me at all, you would be shocked! I will share a post later, on why I felt I had to do this, but that is for another day. :)

I love this recipe because I still feel like I am getting a dessert but I know it is much healthier than my "normal" treat. Yes, there are still sugars in this recipe, but for me, honey is approved!

Ingredients:

  • 2/3 cup coconut oil

  • 2/3 cup peanut butter

  • 2/3 cup honey

  • 2 ½ cups oats

  • 1 cup of goodies (raisins, nuts, chocolate chips, or anything you have on hand!)

Directions:

  1. Place coconut oil, peanut butter, honey in microwave safe bowl and microwave until liquid

  2. Wisk together until smooth

  3. Let cool slightly

  4. Add oats and other goodies, and stir well

  5. Place parchment paper in 9x9 baking sheet or other pan

  6. Press granola mix in pan

  7. Refrigerate until firm and solid

  8. Cut into bars and try not to eat all at once

  9. Store extras (if any) in fridge
